RECIPE
Chicken Meatballs in
Tomato Sauce
Mix 500 g of chicken mince with 1 egg, 2
tablespoons of ricotta, breadcrumbs, grated
Parmesan, lemon zest, basil, salt, and pepper,
then shape into meatballs.
Brown the meatballs in olive oil for a few
minutes and set aside. Sauté diced courgette,
red onion, and red bell pepper, then add finely
chopped tomatoes, basil, salt, pepper, and half a
glass of water.
Simmer for 7 minutes, return the meatballs to
the sauce, top with the remaining ricotta and
Parmesan, and bake at 180°C for 20 minutes
until cooked through and the cheese is lightly
golden.
