Mediterranean
Vegetable Salad
Place peppers, courgettes, red
onion, cherry tomatoes, garlic
and basil in a roasting tin. Drizzle
with oil and Mary Berry's Honey &
Balsamic dressing and roast for 25
minutes at 2000C.
Leave to cool slightly then mix in
rocket, feta, mint, basil and Mary
Berry's Honey & Balsamic dressing
to taste.
